strawberry coconut 'milkshake'

this concoction is completely reminiscent of a classic strawberry milkshake and will take you right back to your childhood - guilt free! as we have been on the hunt to find a healthy milkshake recipe, we are always inspired by sarah britton's, my new roots, who somehow always finds a way to put a healthy twist on an old school classic. as there's nothing better than experiencing nostalgia in the morning, indulging in this luscious strawberry creation, especially when in season, is the perfect way to start your day. we used coconut milk for this recipe, but if you aren't as nuts for coconuts as we are, cashew or almond milk works just as well. when topped with homemade toasted pumpkin seed and cranberry granola, this is fully taken to the next level (recipe to follow). we hope you enjoy starting off your day as much as we do with this blissful morning boost!

Recipe (serves two):

  • 1 cup / 250g strawberries
  • 2 frozen bananas
  • 1/2 cup coconut milk
  • zest of one lemon (grated)
  • 1 tbsp coconut butter

For garnish:

  • shredded coconut (unsweetened)
  • hemp hearts
  • granola (recipe here)

combine strawberries, bananas, coconut milk, lemon zest, and coconut butter in a blender. blend on high speed until smooth and velvety. top with sliced strawberries, shredded coconut, hemp hearts and toasty granola.
